Spicy Cauliflower & Avo Dip
Okay, I’m OBSESSED with Trader Joe’s everything, but especially TJ’s Kung Pao Tempura Cauliflower. I crave it constantly. But, I know it isn’t exactly the healthiest thing for me. So in my search to discover a spicy cauliflower recipe that didn’t require tempura or Kung Pao sauce, just cauliflower & seasoning, I came up with this bad boy. In all honesty, it doesn’t resemble TJ’s Kung Pao Cauliflower at all, but I’m still a fan, and I hope you will be, too! And if you love avocado as much as I do, you’ll LOVE the dip I paired the cauliflower with.
This simple, easy recipe requires nothing but and oven, cauliflower, seasonings and a little oil.
Ingredients:
Spicy Cauliflower
1 head of Cauliflower
1/2 teaspoon Garlic Powder
1/2 teaspoon Chili Powder
1/4 teaspoon Trader Joe’s Onion Salt
1/4 teaspoon Red Pepper Flakes
1/4 teaspoon Basil Flakes
1/4 teaspoon Chipotle Chili Powder
A dash Turmeric
A dash Cumin
Black Peppercorn to taste
For the Avocado Dip:
2 medium Avocados
2-3 tablespoons of Plain Greek Yogurt
1/2 teaspoon(or more) Trader Joe’s Onion Salt
Black Peppercorn to taste
The Process
The Cauliflower:
Preheat oven to 400 degrees.
Chop up the cauliflower into florets
Place in a bowl with 1-2 tablespoons of olive oil (or the oil of your choice)
Slowly add in seasonings and toss until evenly coated
Place in a roasting pan and roast for 30+ minutes (depending on how soft/crispy you prefer your cauliflower)
The Avo Dip:
While the cauliflower is roasting, mash 2 medium avocados in a medium bowl.
Add 2-3 tablespoons of plain greek yogurt (3 will make the dip thinner/creamier, 2 will leave it more chunky)
Add 1/2 teaspoon(or more) of Trader Joe’s Onion Salt.
Mix all ingredients with a spoon until well blended.
Add black peppercorn grounds on top (for taste & garnish)
Cover and place in the fridge to chill - the longer this mix sits, the more flavorful it will be as the ingredients meld together.
Once the Cauliflower is cooked to your liking (30-40min), remove from the oven and let sit and cool for 5-10 minutes.
Serve in a bowl or on a platter with the Avo Dip as dipping sauce :).
