Cheese for Breakfast? You Better Believe it.

I LOVE CHEESE FOR BREAKFAST. There. I said it.

It is likely the European in me — my grandparents on 3 sides are from Europe: Ireland, England and the Czech Republic, and my fourth grandparent is only slightly removed from Canada. I’m only second generation American, and my daycare was run by my Czech grandfather and English grandmother — those European traditions are strongly instilled in me.

And I am SO grateful for it. For many reasons. But, for the purpose of this blog — I am so grateful to have the eating habits of Europeans. Why? Because processed foods aren’t normality in Europe (my former German, Irish & Polish XC teammates can attest to that. Anne, Lauren & Lena, that’s you! ;) ). I wasn’t given pop tarts or sugary cereal as a kid. I was given hearty toast with sardines, fresh fruit and hard boiled eggs with tomatoes. REAL food. Not to mention, my Czech grandfather worked in catering for the infamous Drake Hotel in Chicago/Oak Brook, IL — we ate good, to say the least.

It is for this reason I never really craved sweets or processed food. It wasn’t something I was accustomed to. That is, until I went to college and processed food was abundant — and I mean the Dining Halls were full of it. I was only able to curb my addiction to processed foods by training myself to return to my roots and crave hearty, real, whole foods instead (more on this in another post). And once I did, I was well on my way back to a balanced lifestyle.

So, Yes. I often eat cheese for breakfast. As well as smoked salmon, sardines, oysters, salami and hummus. And it truly powers my day.

Starting off the day with carbs is fine, but with refined sugars? You’re setting yourself up for a complete shut down an hour or so after consumption. Check out my go-to breakfasts below for hearty, energizing and satiating breakfasts that can be made within minutes.

  • Multigrain Toast w/Sliced Brie & Fig Butter

  • Multigrain Toast w/Goat Cheese & Fig Butter or Preserves

  • Multigrain Toast w/Salami

  • Multigrain Toast w/Canned Oysters or Sardines (tomato-based are the best)

  • Oatmeal w/Chia Seeds, Flax Seed, Almonds, Blueberries & Maple Syrup

  • Multigrain Toast w/Hard-boiled Eggs, pepper and red pepper flakes

  • Eggs Any-style & Roasted Potatoes w/spinach, artichoke, mushrooms (any vegetable - you name it!)

  • Egg Cups (a personal fave) - Muffin pan eggs with any veggies/proteins you’d like to add (a full blog post on this coming soon!)

  • And, of course, Avocado Toast - complete with a soft-boiled egg, red pepper flakes and Arugula
