Spicy Sausage, Brussels & Roasted Carrots

1 Aidell’s Sausage Spicy Jalepeno Mango Chicken Sausage
Brussel Sprouts
Rainbow Carrots
Kale
Jasmine Rice (I use minute rice because, lazy).
Preheat oven to 425.
Chop up the brussels, rainbow carrots, and kale.
Place brussels & rainbow carrots in a baking pan and bake for 30+ minutes (depending on how crispy you want the brussels.
Meanwhile, preheat a frying pan sprayed with coconut oil.
Slice Aidell’s Jalepeno Mango Chicken Sausage into 8-10 pieces.
The sausage is pre-cooked, so heat to your liking (I prefer mine a bit crispy, so about 5-7 minutes or until each side blackens).
When the brussels & carrots have about 10 minutes left, add the kale to the baking pan and bake for the remaining time.
Place Jasmine Minute Rice in the microwave and micro for 60-90 seconds (whatever the package says)
In a bowl, layer rice, veggies and sausage.
Top with whatever seasonings you prefer (I used Trader Joe’s Onion Salt and cracked black pepper — the jalepeno mango sausage has a ton of flavor as is!)
